Charlie Vergos' Rendezvous has been a Memphis institution since 1948, when it began as a tavern in a downtown alley. The founder discovered a set of coal chutes in the building and realized that burning charcoal in them created ideal grilling conditions. After a relative in food distribution introduced him to loin back ribs, which were considered scrap product at the time, he began experimenting with seasonings and eventually traveled to New Orleans, where Cajun spices and chili powders transformed his recipe. The result was the dry rubbed rib, a style the Rendezvous claims to have invented and still considers itself the only restaurant doing properly. The ribs are served without sauce, relying entirely on a dry rub of herbs and spices applied before cooking. The restaurant has catered Air Force One multiple times and has hosted guests including the Rolling Stones.
