"This is the razor clam. They take out the meat and stir-fry with fermented black beans, garlic chives, yams, and deep-fried silver fish. It's got a really good texture. It's chewy and crispy and soft, and the flavors are so good. Basically, it's like lobster noodles, but he imported noodles from Hong Kong. The texture is so good. It's al dente. Really, really rich broth. Beautiful texture on the noodles. Really nice. The noodle itself is so al dente. Love it. That fried rice got some really crispy puffed rice in there. The texture is really good. You've got soft texture, crispy textures."
