Quotes

"Few eating experiences are more iconic than the classic red sauce dinner."
"Fresh calamari has to have just a bit of bite to it and has to be tender... Italians got to make a sandwich out of everything, even the calamari. That sauce is a humdinger, huh? So good, man."
"This is unique. Rigatoni, baked and burnt... Before the baked ziti would cool off and it'd be time to eat dinner, I would sneak about five pieces off the corners and edges of the top of the baked ziti. Best part. Because the best part, the crunch, the melted cheese, the char. Speechless. This is the best part."
"(Veal) I barely had to use this knife at all. Oh, it's so good. You hear that? That's nothing. That's three guys who have been yapping for the last hour and a half, silenced by the veal. Was that perfect? Was that the perfect bite?"
"The food has been honest, raw, elemental, explosive, full of life, full of love, full of flavor... The red sauce meal is you want to be surrounded by people that you love"

Our Reflection

Michael's of Brooklyn has been serving Alvin's family for generations in this white tablecloth red sauce joint. The veal chop smash job was the star, so tender it barely needed a knife. It silenced three guys who had been talking nonstop for an hour and a half. This is how you judge a red sauce restaurant. If the veal parm is not breaded right or fried properly, you know the rest of the meal will disappoint.
