La Renommée operates like Hogsalt Hospitality's love letter to Paris—American restaurant group ambition filtered through French culinary tradition inside a building from 1823 that once sold luxury produce to Parisians who probably wore powdered wigs. The filet au poivre alone justifies the walk-in gamble—spot-on medium rare with a sear so spectacular it interacted with the cognac sauce perfectly. The good? Hogsalt finally feels original here rather than copy-pasted from their American locations, that poivre sauce could improve literally anything (fries included), and somehow a sick reviewer with no reservation still managed to have one of the best meals of his travels. The not-so-good? €160 for steak, fries, and dessert is objectively insane even for Paris, the lounge seating feels like consolation prize for arriving five minutes too late, and knowing the burger is supposedly one of Paris's best creates eternal FOMO when you chose the steak. But when restaurants manage to deliver the best steak au poivre you've ever had while you're actively suffering from a wretched fever, complaining about prices feels like missing the point entirely.
