Durumcu Mustafa turns out some of the most satisfying fast food you will find anywhere in Istanbul, and the secret is almost entirely in the heat. The grill runs at a ferocious temperature, and that intensity is what gives the Adana kebab its character. The outside of the meat crisps up while the inside stays moist and full of spiced lamb fat, and the whole thing is wrapped in seconds by a team that has clearly done this thousands of times. The seasoning is confident and straightforward. Sumac adds sourness, cumin adds warmth, and the chili in the lamb itself brings a steady, building heat that keeps each bite interesting.
